Double Chocolate Pancakes

I love breakfast. Who's with me?

There are just so many fun and yummy things to make for breakfast.

Hash browns, waffles, eggs, french toast, and of course - pancakes! Though, I'm sure most of us just pour a bowl of cereal for breakfast on a daily basis, here's a recipe for those days when you just want a treat.

These pancakes are more like hotcakes for sure. Thick, dense, and super chocolatey. I definitely thought that drowning them in chocolate syrup made the pancakes much more delicious.

Double Chocolate Pancakes
(adapted from Group Recipes)
makes 8 pancakes

1 cup milk
1 egg
2 tbsp butter, melted
1 cup all purpose flour
1/3 cup cocoa powder
1/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt
1/2 cup chocolate chips
powdered sugar
desired toppings

Whisk together melted butter, milk, and egg until well combined.

Whisk together flour, baking soda, sugar, salt, and cocoa powder.

Combine the wet and dry ingredients. A good trick for no lumps of dry flour is to make a well in the dry ingredients, pour in the wet ingredients and start mixing in a circular motion from the center out.

Stir in the chocolate chips.

Heat a nonstick pan on med-low or low heat. Pour 1/4 cup of batter on pan for each pancake. Flip once batter is cooked around edges and then cook through. Serve with powdered sugar and other desired toppings.

Enjoy!
