Summer Avocado and Grilled Corn Salad


There are only a couple more weeks of summer left and I still have more summer recipes to share with you all! One of the recipes I've been really excited to share is a summer salad. Salad recipes are always fun to know because you can adjust any of the ingredients to your liking. This recipe is not only very healthy, but also very bright, colorful, and summery. My favorite ingredients in this salad are the avocado and grilled corn. The soft, rich avocado and aromatic corn just enhance the entire flavor of the salad.

The recipe is quite simple. Plus, you can play with the vegetables and vegetables until you reach your preference. Eat the end result with tortilla chips or even with a fork. It'll be delicious any way.


Summer Avocado and Grilled Corn Salad
Serves 8

1 can chickpeas
1 can black beans
1 red bell pepper
1/2 lettuce head
1 red onion
1 mango
3 Persian cucumbers
1 box cherry tomatoes
3 corn cobs
1 large avocado
1 small lemon (optional)
salt and black pepper for taste (optional)

Drain the cans of beans and set them aside.

Bring 4 cups of water to boil in a large pot and drop in the corn. Cover the pot with a lid and allow the corn to cook for about 10 minutes or until the corn kernel's are soft and ready to eat.

Meanwhile chop the bell pepper, red onion, lettuce, mango, and cucumbers into small squares. Slice the cherry tomatoes into 2's or 4's depending on the size of the tomato.

Check on the corn cobs and if they are ready, take them out. Wrap each corn cob with foil and poke holes in the foil. Rotate the corn directly on top of your stove fire until they develop a lovely charred skin. Allow them to cool for a couple minutes. This will make them easier to handle. Using a knife, slice the kernels off of the cob.

Chop the avocado after everything else is prepared so that it will not brown. Toss all the prepped ingredients into a large bowl with fresh lemon juice and any other seasonings you would like. Transfer the salad into your serving bowl and tada! You have one awesome salad. :)

Wow this avocado and grilled corn salad looks amazing. Have you tried Pakistani Cooking Recipes I love all Pakistani Recipes and mostly the appetizers by zarnak sidhwa recipes
