Ramadan 2011 - Iftar for the 'hood

As you may or may not know, dear reader, this is a very special time for my sister Wardah and I... and millions of others. Muslims are currently observing the month of Ramadan, which is the ninth month on the Islamic calendar.

Ramadan is a month in which Muslims from every corner of the world fast. We fast because we are obligated to by our religion. Fasting teaches Muslims patience, obedience, moderation, and empathy towards our less-fortunate brothers and sisters who do not have enough to eat on a regular basis.

Fasting means no eating or drinking at all from dawn to sunset. Then, at sunset, Muslims eat a special meal called iftar, which often includes dates and milk. As an American-Pakistani, I sometimes eat items such as pakoras and samosas for iftar, while on other days, I might break my fast with pizza and frozen yogurt.

This Ramadan, my family and I wanted to share our iftar meal with our neighbors. We live in a neighborhood where Muslims are a minority. So we thought that if we share our iftar with our neighbors, they could learn a little something new about Muslims.

A couple hours before sunset, we began preparing platters of dates and traditional foods that Pakistani people break their fast with. This iftar included a fruit salad known as a fruit chaat, pakoras, samosas, kabobs, puff pastries stuffed with seasoned meat, and a chickpea salad known as cholay. My siblings and I prepared the food with my mother's expert help, then we formed an assembly line to dish out the different foods on the platters. The entire time, we were wading through amazing aromas. As everyone was fasting, this was an extreme lesson in self-control :)

I also baked chocolate chip cookies for the occasion. You can't have a meal without having dessert!

We even prepared a refreshing drink called Rooh Afza, which is popular at Pakistani iftars.

Water bottle gradient!

My family and I really enjoyed making iftar for our neighbors. Hopefully they learned something about Ramadan from us, and we learned to be more giving.

Baking with My Brother

Baking with Abdullah
My brother, Abdullah, is a twelve-year old bundle of fun. It had been a long time since I last spent a day with him, completely free of distractions and scuffles, just to have fun. So, when he proposed making cookies for family and friends, I decided it was the perfect opportunity to have our brother-sister date.

Turtle Fudge Brownies
This was my brothers first time in the kitchen baking so I thought we would tackle something simple, but my mom had other plans for us. She gave us a list of requests from my sisters and her which turned into something like this -- chocolate chip cookies, brownies, white chocolate chip cookies, oatmeal cookies, sugar cookies, and spice cake. My brother and I crossed out some stuff from the list but in the end, we still spent more than 5 hours in the kitchen.

White Chocolate Chip Cookies
We made turtle fudge brownies, 2 dozen chocolate chip cookies, 2 dozen white chocolate chip cookies, 1 dozen oatmeal almond cookies, and 2 dozen oatmeal chocolate chip cookies. Everything was a great success! After all of our baking was over, Abdullah kept on saying, "Hey, how come you never let me help out in the kitchen before? I never knew I had such a talent for baking!" Hahaha, he is pretty funny. He told me yesterday that when he gets older, he wants to be a pastry chef or a cook. I wonder how long that dream will last for.

Chocolate Chip Cookies
The best thing wasn't that the cookies were made from scratch, or that they turned out great, and most definitely not the mess of a kitchen I had to clean up afterwards, but the fact that we spent some quality time together. And I wouldn't give that up for anything else in the world.

Cookies... yummm.
In the end, we set the treats in trays and wrapped them for friends, family, and awesome neighbors. Of course, we kept half of everything for ourselves!

Gift Trays
Would you like one too next time? ;)

Wardah

A Lunch Your Heart Will Thank You For

I always post about the cakes I make, which are tasty but sugary. My last food post was of my sister's potato salad which was quite tasty, but also high in fat and cholesterol.

The following pasta recipe contains a good source of fiber, an essential carbohydrate, which is found in whole grains and vegetables. The recipe also uses canola oil, which is the best oil someone can use as it contains little saturated fat and a lot of monounsaturated fat - the good kind of fat. Make sure to always include fiber-full ingredients in your meals. Also, reduce saturated fat consumption because saturated fat can lead to cardiovascular heat diseases such as coronary artery diseases.

So today I've decided to share with you a nutritious meal from my kitchen which not only contains whole grains and vegetables - but it also tastes amazing!

Whole Grain Pasta with Bell Peppers and Chicken

Hearty Chicken Soup with Vegetables and Pasta

Leafy Salad
The pasta recipe is simple:

Whole Wheat Penne Pasta with Bell Peppers and Chicken

Ingredients:

     1 lb. boneless chicken breasts
     2 tbs canola oil
     1 onion
1 green bell pepper (or any color you like)
     26-oz. jar tomato sauce
1 box whole wheat penne pasta
optional: Italian seasoning, garlic or dried herbs

Cut chicken breasts into 1⁄2-inch strips. Sauté strips in frying pan with canola oil. Set aside.

Slice onions and green peppers. Sauté sliced onions and peppers in canola oil in a medium saucepan until tender add tomato sauce and cook until it begins to boil. Reduce heat and simmer for 10 minutes or until pasta is ready. Cook pasta according to directions on package.

Measure out 1 cup pasta onto each plate, then top with 1⁄2 cup sauce. Place chicken on top of or beside the pasta. You can also serve it by stirring all the sauce into the pasta before serving.

Good luck!

Painting 5 Canvases as 1

Hello everyone

You all met my sister in my last post - No, she did not teach me all I had to learn about baking. I'm a self taught genius, muhahah. - and were able to see one of her great recipes. - That potato salad is seriously addicting. I hope you enjoy her contributions to my blog.

Back to me - I can't let her steal the spotlight for too long, right? - I recently painted a present for my mother. She'd been asking me for days to make her something to display in the living room and I decided my one week break from school was the perfect time to do it - School is my excuse for my long absence from the blog scene too. So let me show you what did...

After being inspired by some "series" paintings in which several canvases are used to create one painting, I came up with this:

Just a sketch.
Sketching it on to my canvases.

Finished and hanging in my living room
I finished this painting in around 9-10 hours - No, I didn't paint for 9 hours straight. So, what do you guys think?

Love,
Wardah

Easy Scrumptious Potato Salad

Hello guys, I am Wardah's sister and fellow partner-in-thyme. I'm there for her when she is frantically searching for a substitute for sour cream and I am her photographer. I'm also the one who helps her clean up after she makes a huge mess in the kitchen.

She recently had the pleasure of trying my potato salad, and in a moment of inspiration (and a stroke of pure genius), she asked me, "Why don't you write guest posts for my blog? You can bake too."

Why thank you for noting, Wardah.

I actually taught her everything she knows about the world of combining ingredients into edible creations, but she won't admit it ;)

Today I'll be sharing my version of the potato salad.

This "salad" is high in cholesterol, but it tastes SO GOOD. You will want to find family and friends to share it with, or you might end up eating it all by yourself.

I didn't write it on my recipe card, but adding garlic powder makes this potato salad taste even yummier. How much powder? I say go crazy with it!

I also added some shell pasta because my siblings like it.

Unfortunately, my family finished it off before I could get a picture of the completed potato salad. I think you will have to try this recipe for yourselves to see what it looks like- and more importantly, to taste it :)
