Mango Ice Cream

Almost a year ago, S bought an ice cream maker for me as an anniversary present. I had been waiting for the perfect opportunity to use it but thanks to the horrible Michigan weather, that moment never came around. I had put it in the back room in my mental palace when the other day, S was like remember that ice cream maker I bought you... Think you'll use it one of these days? I looked outside and lo and behold! It was sunny! Birds were chirping, kids were playing on the field. I decided, today I'll make some ice cream.

Mint Chocolate Chip Ice Cream Cake

Summer! I've never appreciated the summer heat more than I have after living through my first Midwestern winter last year. Record breaking cold and snow is pretty hard for a SoCal girl to come to terms with. Let's just say that I rediscovered the meaning of drinking a cup of hot chocolate and snuggling in a warm blanket on a rainy snowy day. So now that the sun is out again, I decided to make the most of these hot days (and S's chocolate obsession) by making this mint chocolate chip ice cream cake.
